Zoodle Onion Soup/Casserole

A meatless casserole made with zucchini noodles

Ingredients
  

  • 3 each Sweet Onions Sliced thinly
  • 3 tbps butter or olive oil I use butter
  • 1 tsp Thyme Fresh or 1/4 dried
  • 1 to taste salt and pepper
  • 2 cups Beef Stock
  • 3 tbsp Worcestershire
  • 2 tbsp Sherry Wine Cooking
  • 3 cups Zucchini Noodles If frozen, defrost and squeeze out water. If fresh, Cook and squeeze out water.
  • 1 cup Parmesan Cheese Shredded
  • 1.5 cups Mozzarella or Fontina or Gruyere Cheese Shredded

Instructions
 

  • Melt Butter and add onions and thyme, salt and pepper
  • Sauté until caramelized.
  • Add Beef Stock, Worcestershire and Cooking Sherry
  • Let cook down till liquid is reduced by half.
  • Add Zoodles, mix together and pour into casserole dish.
  • Top with cheese.
  • Bake at 400 degrees F. for 20 minutes.

Notes

Could add muchrooms when sautéing onions. Could also add more stock to make it more of a soup (or bone broth for more protein.) This would be a great side dish as well.
