Zoodle Onion Soup/Casserole
A Meatless Casserole made with zucchini noodles

Ingredients

Sweet Onions
Sliced Thin

butter or olive oil
I use butter

tsp
Fresh Thyme Leaves
(or 1/4 dried)

salt and pepper

Beef Stock

tbsp
Worcestershire

tbsp
Cooking Sherry Wine

Zucchini Noodles
If frozen, defrost in microwave and squeeze out water. If fresh - cook them and squeeze out water

Parmesan Cheese
Shredded
1.5
cups
Mozzarella or Fontina or Gruyere Cheese
Shredded
Instructions
Melt Butter and add onionsm thyme, salt and pepper.
Sauté until caramelized.
Add Beef Stock, Worcestershire and Cooking Sherry
Let Cook down til liquid is reduced to half.
Add Zoodles, mix together and pour into casserole dish.
Top with Cheese
Bake at 400 Degrees Fahrenheit for 20 minutes
Notes
Could add mushrooms when sautéing onions. Could also add more stock to make it more of a soup (or bone broth fro more protein). This would be a great side dish as well!
