Zoodle Onion Soup/Casserole
A meatless casserole made with zucchini noodles
Ingredients
- 3 each Sweet Onions Sliced thinly
- 3 tbps butter or olive oil I use butter
- 1 tsp Thyme Fresh or 1/4 dried
- 1 to taste salt and pepper
- 2 cups Beef Stock
- 3 tbsp Worcestershire
- 2 tbsp Sherry Wine Cooking
- 3 cups Zucchini Noodles If frozen, defrost and squeeze out water. If fresh, Cook and squeeze out water.
- 1 cup Parmesan Cheese Shredded
- 1.5 cups Mozzarella or Fontina or Gruyere Cheese Shredded
Instructions
- Melt Butter and add onions and thyme, salt and pepper
- Sauté until caramelized.
- Add Beef Stock, Worcestershire and Cooking Sherry
- Let cook down till liquid is reduced by half.
- Add Zoodles, mix together and pour into casserole dish.
- Top with cheese.
- Bake at 400 degrees F. for 20 minutes.
Notes
Could add muchrooms when sautéing onions. Could also add more stock to make it more of a soup (or bone broth for more protein.) This would be a great side dish as well.
