Alysa’s Doppelgångers
Low sugar, low fat, good taste cookies
Servings: 4 dozen
Ingredients
Dry Ingredients
- 2 cups Whole Grain Rolled Oats
- 2 cups Ground Whole Oats measure after ground
- 1 cup Oat Bran
- 1 cup Ground Flax Seeds measure after ground
- 3/4 cup Chia Seeds
- 1/3 cup Chicory Root Fiber
- 1 tsp Cinnamon
- 1 tsp Vanilla
- 1 tsp Baking Soda
Dried Fruit
- 3/4 cup Cranberries diced
- 3/4 cup Dates diced
- 3/4 cup Coconut diced
- 3/4 cup Black Currants I used dried Cherries
Mix Together the oils
- 1 cup Coconut Oil
- 1/2 cup Palm Fruit Oil
- 1/3 cup Olive Oil
Other
- 3 each Egg Whites at room temperature
- 1/3 cup Water
- 2 each Bananas ripe
Instructions
- Mix dry ingredients together in a large bowl.
- Add chopped fruit and stir.
- Add alternately the oil, egg whites and water.
- Stir until combined. (I added two bananas at this point and stirred again.)
- Bake at 350 for 12ish minutes (i made 1 inch balls and cooked them on parchment paper lined cookie sheets).
Notes
If you can figure out what of the original ingredients
to add or cut down on in order to make them chewy and moist without adding the bananas I sure would love to know!
Mine were good but tasted healthier than the original…and who wants that?!😜.
*** On the batch that came out dry I crumbled and used as “granola” on yogurt.
