Slap Ya Black Bean Soup
Amy made up a tasty black bean soup recipe with Slap Ya Momma spice and Andoulle sausage!
Servings: 12 people
Ingredients
- 4 cans Black Beans Drained (Or, one bag dired black beans, soaked overnight)
- 2 each peppers chopped (Whatever you have, I used red and orange)
- 2 each onions chopped (I used 1 sweet and 1 purple)
- 1 lbs Andouille Sausage
- 2 tbsp olive oil
- 8 cups chicken stock
- 2 cups leftover rotisserie chicken
- 1 can black beans mashed – at the end for thickening (optional)
Seasonings
- 2 tbsp garlic minced
- 2 tsp oregano
- 2 tsp garlic powder Be Generous
- 1 tsp black pepper
- 2 tsp Slap Ya Mama seasoning
- 2 tsp cumin
- 2 tbsp Balsamic Vinegar
- 1 each bay leaf
Garnish with:
- 1 handful fresh cilantro and more for garnishing
- 1 cup sour cream
- 1 each avocado
Instructions
- Sauté onions, peppers and sausage in olive oil until items begin to caramelize.
- Add seasonings and cook about 5 minutes longer.
- Add broth and deglaze your pan.
- Add beans and chicken (if desired).
- Let simmer on low for at least 30 minutes … or all afternoon.
- Garnish with fresh cilantro, sour cream, and avocado.
