Zoodle Onion Soup/Casserole
A Meatless Casserole made with zucchini noodles
Servings: 10
Ingredients
- 3 each Sweet Onions Sliced Thin
- 3 tbsp butter or olive oil I use butter
- 1 tsp Fresh Thyme Leaves (or 1/4 dried)
- 1 to taste salt and pepper
- 2 cups Beef Stock
- 3 tbsp Worcestershire
- 2 tbsp Cooking Sherry Wine
- 3 cups Zucchini Noodles If frozen, defrost in microwave and squeeze out water. If fresh – cook them and squeeze out water
- 1 cup Parmesan Cheese Shredded
- 1.5 cups Mozzarella or Fontina or Gruyere Cheese Shredded
Instructions
- Melt Butter and add onionsm thyme, salt and pepper.
- Sauté until caramelized.
- Add Beef Stock, Worcestershire and Cooking Sherry
- Let Cook down til liquid is reduced to half.
- Add Zoodles, mix together and pour into casserole dish.
- Top with Cheese
- Bake at 400 Degrees Fahrenheit for 20 minutes
Notes
Could add mushrooms when sautéing onions. Could also add more stock to make it more of a soup (or bone broth fro more protein). This would be a great side dish as well!
