Zoodle Onion Soup/Casserole

A Meatless Casserole made with zucchini noodles

Ingredients

  • 3 each Sweet Onions Sliced Thin
  • 3 tbsp butter or olive oil I use butter
  • 1 tsp Fresh Thyme Leaves (or 1/4 dried)
  • 1 to taste salt and pepper
  • 2 cups Beef Stock
  • 3 tbsp Worcestershire
  • 2 tbsp Cooking Sherry Wine
  • 3 cups Zucchini Noodles If frozen, defrost in microwave and squeeze out water. If fresh – cook them and squeeze out water
  • 1 cup Parmesan Cheese Shredded
  • 1.5 cups Mozzarella or Fontina or Gruyere Cheese Shredded

Instructions

  • Melt Butter and add onionsm thyme, salt and pepper.
  • Sauté until caramelized.
  • Add Beef Stock, Worcestershire and Cooking Sherry
  • Let Cook down til liquid is reduced to half.
  • Add Zoodles, mix together and pour into casserole dish.
  • Top with Cheese
  • Bake at 400 Degrees Fahrenheit for 20 minutes

Notes

Could add mushrooms when sautéing onions. Could also add more stock to make it more of a soup (or bone broth fro more protein). This would be a great side dish as well!
